Koji mold (Aspergillus oryzae) is Japan's officially designated "national fungus," and for more than a thousand years it has underpinned the entire culture of Japanese fermented foods — sake, miso, soy sauce, mirin, amazake and more. Koji Beef extends this single culture from "fermenting food" to "designing how cattle are raised," and on to "aging the meat" — the koji in the feed and the koji in the aging come from the same mold.

In an era when eating meat was restricted, Japan used fermentation and curing to extend the keeping and flavor of beef. The starting point of that lineage was a Chinese herbal compendium.

It records that "yellow cattle beef is sweet in taste and non-toxic; it calms the center and benefits qi, nourishes the spleen and stomach, and strengthens the waist and legs." This herbal compendium later traveled east to Japan.

Hanaki Denemon of the Hikone Domain, drawing on the Bencao Gangmu, created miso-cured beef known as Hanpongan (反本丸). That was more than three hundred years ago.

The Process Three Hundred Years Ago

The production record preserved at Hikone Castle Museum describes the process as — butchering in midwinter · removing sinew · soaking in clean water to remove odor · steaming · tying with cord and drying in the shade.

The combination of deodorizing, steaming and shade-drying is, in essence, controlling moisture and flavor through low temperature and time — the same root as today's wet aging and dry aging.

A herbal compendium that originated in China took root in Edo-period Japan for over three hundred years; today it returns to the Chinese table in the form of verifiable science.

How is "糀" pronounced, and what does it mean?
It is read "huā" (the same as 花, flower). A character coined in Japan meaning "flowers blooming on rice" — the fermentation in which koji mold blossoms on grains of rice like flowers — which is our brand motto: "Flowers on rice, koji awakens the meat."
How does koji-mold aging differ from ordinary dry aging?
Ordinary dry aging relies on ambient microflora and takes 45–60 days. Koji-mold aging ferments actively with a designated strain, delivering both umami and aged aroma in 21 days, with a yield of 75–80% (traditional dry aging: 65–70%). The change in umami is quantified as EUC by a CMA / CNAS-accredited third-party laboratory.
How should aged meat be stored and cooked?
Keep chilled at 0–4℃ on arrival and follow the shelf life on the label. The fat has a low melting point and a clean taste, so heavy seasoning is unnecessary: swish in hot pot for 8–10 seconds; grill until lightly charred on the surface; sear lightly on a griddle to lock in the juices. We recommend tasting it plain first, then with sauce.
Are Hanpongan and Koji Beef the same product?
No. Hanpongan (反本丸) was the Hikone Domain's miso-cured beef of more than three hundred years ago and belongs to the historical record. Koji Beef uses koji-mold fermentation and low-temperature aging to reconstruct, with modern methods, the same idea of "improving beef through fermentation."
